Incredible Gluten Free Oatmeal Cookies. A nutrition on the go snack

Although breakfast and lunch are important meals in your day, are you finding that sometimes your so busy you don’t always have time to stop and eat properly?   I too have days like that so I developed a simple cookie recipe that I make on a Sunday afternoon that is delicious and nutritious to get you through on these occasions.    This recipe will make one and a half dozen cookies that you can freeze and eat on the go

Ingredients:

  • 1 ½  cups Robin Hood all purpose gluten free flour
  • ½ cup natural brown sugar
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ cup butter
  • 1 egg
  • ½ teaspoon pure vanilla
  • 1 cup wheat free Only oats (contains no wheat barley or rye)
  • ½  teaspoon cinnamon
  • ¼ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ¼ cup canola oil
  • ½ raisons
  • ¾ cup trail mix of your choice

In a mixing bowl stir together first 5 ingredients.  Add butter, egg and vanilla: beat well.  Stir in oats, cinnamon, cloves, nutmeg.  Add canola oil a little at a time to help bind the ingredients together so that it’s a little on the sticky side.  Add raisons and the trail mix.  Drop on a greased cookie sheet and bake at 350 for 10-12 minutes.

By 2002, with her children almost all grown up and leaving home, Anita divorced, sold her business, and started over again. With her daughter at her side, she began building a new life.

Today, Anita is more determined than ever. With Wanda and Lori at her side, she knows her company will become the first all women-owned business to make an impact in North America with their natural health beverage, VIVACA™.

Anita is a proud grandmother of two boys. Her four children are independent and successful [with the same spit and fire that their mother has] and when she talks about them, she beams with pride.
